I don’t believe in monsters.
What they claimed at the time was that Fincher (who’s a stickler for details) actually examined the evidence, including the desktop.
So the reconstruction should be pretty accurate, including (one would think) the task force scene where they inspect the poem (if that never happened, it seems like an odd thing to invent).
One thing strikes me, though. The photographer supposedly took the pictures while the desk was intact, presumably on site (in the storage room). So if they unscrewed (or otherwise removed) the top, that would have happened after the pictures were taken. Possibly. Perhaps they took further pictures of the detached top.
That desk is in evidence someplace. I doubt they would care much about the legs & framing of the desk,but rather the wooden surface itself,so makes sense they would remove it.

I do not see the entire desk being turned over as a huge obstacle or something that wouldn’t happen from time to time. Janitors would likely turn a desk over and put it on top of another to mop and wax a floor after moving all the desks to one side of a room. Depending on the time of day this was done anyone could have access to the room and the desks.

It’s not hard at all to find an opportunity to write something on the underside of a desk, if that’s what you want to do.
For an experiment, go to the nearest school, enter a random classroom, choose a random desk, turn it over and see if someone has quoted Lady Gaga.

Depends how you go about it. Me, I always dress up like Lady Gaga herself before going on such a mission. Never been arrested. Bit disappointing, actually.
